  • Carrot - 1 medium, diced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Cilantro - 15 grams (1/2 cup), chopped for garnish
  • Avocado - 1/2, diced for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and diced carrot, cooking for an additional 2-3 minutes until fragrant.
  3. Stir in the cumin and oregano, cooking for another minute to release the spices' flavors.
  4. Add the cooked black beans and vegetable broth to the pot, bringing the mixture to a boil.
