Ingredients

  • Black beans - 200 grams, cooked and drained
  • Vegetable broth - 500 ml
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced
  • Fresh cilantro - a handful, chopped for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Stir in the cumin and oregano, cooking for an additional minute until fragrant.
  3. Add the cooked black beans and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  4. Using an immersion blender, blend the soup until smooth, or leave it chunky for a heartier texture.
  5. Season with salt, black pepper, and lime juice. Stir well and let it simmer for another 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
