  • Vermicelli noodles - 100 grams

  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the diced carrot and celery to the pot, cooking for another 5 minutes until they soften.
  3. Stir in the diced tomato, cumin, chili powder, salt, and black pepper. Cook for 3-5 minutes until the tomatoes start to break down.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, add the vermicelli noodles and reduce the heat to a simmer.
  5. Cook the noodles according to package instructions, usually around 5-7 minutes, until tender.
  6. Remove from heat and stir in the lime juice and chopped cilantro.
  7. Serve hot, garnished with additional cilantro and lime wedges if desired.
