- Vermicelli noodles - 100 grams

- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced carrot and celery to the pot, cooking for another 5 minutes until they soften.
- Stir in the diced tomato, cumin, chili powder, salt, and black pepper. Cook for 3-5 minutes until the tomatoes start to break down.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the vermicelli noodles and reduce the heat to a simmer.
- Cook the noodles according to package instructions, usually around 5-7 minutes, until tender.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
