Ingredients

  • Fideo noodles - 100 grams
  • Vegetable broth - 500 milliliters
  • Canned lentils (drained and rinsed) - 200 grams
  • Tomato (diced) - 1 medium
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Olive oil - 1 tablespoon
  • Cilantro (chopped) - 2 tablespoons
  • Lime - 1 (juiced)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent (about 3-4 minutes).
  2. Add the diced tomato and cook for another 2-3 minutes until the tomato softens.
  3. Pour in the vegetable broth and bring it to a boil.
  4. Once boiling, add the fideo noodles and cook according to package instructions (usually about 5-7 minutes).
  5. In the last 2 minutes of cooking, add the drained lentils to the pot to heat through.
  6. Season with salt and pepper to taste. Stir in lime juice and chopped cilantro just before serving.
  7. Serve hot, garnished with additional cilantro if desired.
