- Fideo noodles - 100 grams
- Vegetable broth - 500 milliliters
- Canned lentils (drained and rinsed) - 200 grams
- Tomato (diced) - 1 medium
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Olive oil - 1 tablespoon
- Cilantro (chopped) - 2 tablespoons
- Lime - 1 (juiced)
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent (about 3-4 minutes).
- Add the diced tomato and cook for another 2-3 minutes until the tomato softens.
- Pour in the vegetable broth and bring it to a boil.
- Once boiling, add the fideo noodles and cook according to package instructions (usually about 5-7 minutes).
- In the last 2 minutes of cooking, add the drained lentils to the pot to heat through.
- Season with salt and pepper to taste. Stir in lime juice and chopped cilantro just before serving.
- Serve hot, garnished with additional cilantro if desired.
