Ingredients

  • Fresh corn kernels - 2 cups
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Cilantro - 1/4 cup, chopped
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Lime juice - 1 tablespoon

Steps

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced red bell pepper, corn kernels, cumin, smoked paprika, salt, and pepper. Cook for 5 more minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat and simmer for 10 minutes to allow the flavors to meld.
  7. Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half.
  8. Stir in the coconut milk and lime juice. Heat for an additional 2-3 minutes.
  9. Serve hot, garnished with chopped cilantro.
