  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Chipotle peppers in adobo sauce - 2 peppers, minced
  • Vegetable broth - 500 ml
  • Black beans - 240 grams, drained and rinsed
  • Corn - 100 grams (fresh or frozen)
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat the olive oil in a medium pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic, diced carrot, celery, and red bell pepper. Cook for an additional 5-7 minutes until the vegetables begin to soften.
  3. Stir in the canned diced tomatoes along with their juices, the minced chipotle peppers, and the vegetable broth. Bring the mixture to a simmer.
  4. Add the black beans and corn to the pot, stirring well. Season with salt and pepper to taste.
  5. Let the soup simmer for about 10-15 minutes, allowing the flavors to meld together.
  6. Remove from heat and stir in the chopped cilantro and lime juice before serving.
