- Red bell pepper - 1 medium, diced
- Canned diced tomatoes - 400 grams
- Chipotle peppers in adobo sauce - 2 peppers, minced
- Vegetable broth - 500 ml
- Black beans - 240 grams, drained and rinsed
- Corn - 100 grams (fresh or frozen)
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
Steps
- Heat the olive oil in a medium pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, celery, and red bell pepper. Cook for an additional 5-7 minutes until the vegetables begin to soften.
- Stir in the canned diced tomatoes along with their juices, the minced chipotle peppers, and the vegetable broth. Bring the mixture to a simmer.
- Add the black beans and corn to the pot, stirring well. Season with salt and pepper to taste.
