Ingredients

  • Pork chicharrón - 100 grams

  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Avocado - 1/2, diced
  • Corn tortillas - 2, cut into strips
  • Salt - to taste
  • Pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  2. Add the diced tomato to the pot and cook for another 2-3 minutes until the tomato breaks down slightly.
  3. Pour in the chicken broth and bring to a simmer. Season with salt and pepper to taste.
  4. Once the broth is simmering, add the chicharrón and let it cook for about 10 minutes to soften slightly and infuse the flavors.
  5. Stir in the chopped cilantro and lime juice just before serving.
  6. In a separate pan, lightly fry the tortilla strips until crispy. Drain on paper towels.
  7. To serve, ladle the soup into bowls and top with diced avocado and crispy tortilla strips.
