Steps
- In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
- Add the diced tomato to the pot and cook for another 2-3 minutes until the tomato breaks down slightly.
- Pour in the chicken broth and bring to a simmer. Season with salt and pepper to taste.
