- Chayote - 2 medium-sized
- Vegetable broth - 500 ml
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cilantro - 1/4 cup, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Avocado - 1/2, diced (for garnish)
- Corn kernels - 1/2 cup (optional)
Steps
- Begin by washing the chayotes thoroughly. Cut them in half, remove the seed, and chop them into small cubes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped chayote and cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the chayote is tender.
- Once cooked, use an immersion blender to blend the soup until smooth, or transfer it to a blender in batches. Blend until you reach your desired consistency.
- Return the soup to the pot, add lime juice, chopped cilantro, salt, and black pepper to taste. Heat through for another 2-3 minutes.
- Serve hot, garnished with diced avocado and additional cilantro if desired.
