Ingredients

  • Chayote - 2 medium-sized
  • Vegetable broth - 500 ml
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1/2, diced (for garnish)
  • Corn kernels - 1/2 cup (optional)

Steps

  1. Begin by washing the chayotes thoroughly. Cut them in half, remove the seed, and chop them into small cubes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the chopped chayote and cook for about 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the chayote is tender.
  6. Once cooked, use an immersion blender to blend the soup until smooth, or transfer it to a blender in batches. Blend until you reach your desired consistency.
  7. Return the soup to the pot, add lime juice, chopped cilantro, salt, and black pepper to taste. Heat through for another 2-3 minutes.
  8. Serve hot, garnished with diced avocado and additional cilantro if desired.
