  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon (to taste)
  • Black pepper - 1/4 teaspoon (to taste)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, juiced

Steps

  1. Heat the olive oil in a medium pot over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and cumin, cooking for an additional minute until fragrant.
  3. Stir in the green peas and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup.
  5. Season with salt, black pepper, and lime juice to taste. Return to low heat to warm through.
  6. Serve hot, garnished with fresh cilantro.
