- Green peas - 300 grams (fresh or frozen)
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon (to taste)
- Black pepper - 1/4 teaspoon (to taste)
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lime - 1, juiced
Steps
- Heat the olive oil in a medium pot over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and cumin, cooking for an additional minute until fragrant.
- Stir in the green peas and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup.
- Season with salt, black pepper, and lime juice to taste. Return to low heat to warm through.
- Serve hot, garnished with fresh cilantro.
