Ingredients

  • Swiss chard - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Tomato - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Wash and chop the Swiss chard, separating the stems from the leaves. Dice the stems and set the leaves aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and diced potato to the pot. Sauté for another 5 minutes, stirring occasionally.
  4. Stir in the diced Swiss chard stems, chopped tomato, and cumin. Cook for 2-3 minutes until the tomatoes start to break down.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 10 minutes until the potatoes are tender.
  6. Add the Swiss chard leaves to the pot and cook for an additional 5 minutes until wilted. Season with salt, black pepper, and lime juice to taste.
  7. Serve hot, garnished with fresh cilantro.
