- Swiss chard - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 500 milliliters
- Tomato - 1 medium, chopped
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lime - 1, juiced
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Wash and chop the Swiss chard, separating the stems from the leaves. Dice the stems and set the leaves aside.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and diced potato to the pot. Sauté for another 5 minutes, stirring occasionally.
- Stir in the diced Swiss chard stems, chopped tomato, and cumin. Cook for 2-3 minutes until the tomatoes start to break down.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 10 minutes until the potatoes are tender.
- Add the Swiss chard leaves to the pot and cook for an additional 5 minutes until wilted. Season with salt, black pepper, and lime juice to taste.
- Serve hot, garnished with fresh cilantro.
