Ingredients

  • Cauliflower - 300 grams (for pizza crust)
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Shrimp - 200 grams, peeled and deveined
  • Lime juice - 3 tablespoons
  • Cucumber - 1 small, thinly sliced
  • Red onion - 1/4 medium, thinly sliced
  • Jalapeño - 1 small, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a food processor, pulse the cauliflower until it resembles rice, then steam for about 5 minutes until tender.
  3. Let the cauliflower cool, then squeeze out excess moisture using a clean kitchen towel.
  4. In a bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, and salt. Mix well to form a dough.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
  7. While the crust bakes, marinate the shrimp in lime juice, jalapeño, salt, and olive oil for about 10 minutes.
  8. Once the crust is done, remove it from the oven and top with cucumber, red onion, and marinated shrimp.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes until the shrimp are cooked through.
  10. Garnish with fresh cilantro before slicing and serving.
