  • Chicken or vegetable broth - 200 ml
  • Peanut butter (natural, unsweetened) - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro, chopped - for garnish

Steps

  1. Rinse the shirataki noodles under cold water for 2-3 minutes, then drain and set aside.
  2. In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. Stir in the cocoa powder, cumin, and chili powder, mixing well to coat the onions and garlic with the spices.
  5. Pour in the chicken or vegetable broth and bring to a simmer. Allow it to cook for about 5-7 minutes, letting the flavors meld together.
  6. Add the peanut butter to the skillet, stirring until fully incorporated and the sauce is smooth. Season with salt and black pepper to taste.
  7. In a separate pot, add the rinsed shirataki noodles and cook according to package instructions, usually about 2-3 minutes. Drain and rinse again.
  8. Combine the shirataki noodles with the mole sauce in the skillet, tossing to coat the noodles evenly.
  9. Serve immediately, garnished with fresh chopped cilantro.
