Ingredients
- Tomatillos - 300 grams
- Fresh cilantro - 30 grams
- Jalapeño pepper - 1 medium
- Garlic - 2 cloves
- Lime - 1 medium, juiced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Remove the husks from the tomatillos and rinse them under cold water.
- Cut the tomatillos in half and place them cut-side down on a baking sheet.
- Roast the tomatillos in the oven for about 10-15 minutes, until they are soft and slightly charred.
- While the tomatillos are roasting, chop the cilantro, jalapeño (remove seeds for less heat if desired), and garlic.
- Once the tomatillos are done, remove them from the oven and let them cool slightly.
- In a blender, combine the roasted tomatillos, cilantro, jalapeño, garlic, lime juice, olive oil, salt, and black pepper.
- Blend until smooth, adjusting seasoning to taste.
