  • Garlic - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat a skillet over medium heat.
  2. Place the Roma tomatoes and jalapeño pepper in the skillet and roast them for about 8 minutes, turning occasionally until they have charred spots.
  3. Remove the roasted ingredients from the skillet and let them cool slightly.
  4. Chop the onion, cilantro, and garlic finely.
  5. In a mixing bowl, combine the chopped onion, cilantro, and garlic with the roasted tomatoes and jalapeño (remove seeds for less heat if desired).
  6. Add lime juice, olive oil, salt, and black pepper to the mixture and stir well to combine.
