Ingredients
- Tomatoes - 400 grams
- Serrano chilies - 2
- Garlic cloves - 2
- Onion - 1 small (about 100 grams)
- Cilantro - 15 grams
- Lime juice - 15 ml
- Olive oil - 1 tablespoon (15 ml)
- Salt - 1 teaspoon (5 grams)
- Black pepper - 1/2 teaspoon (2 grams)
Steps
- Preheat your oven to 200°C (400°F).
- Place the tomatoes, serrano chilies, and garlic cloves on a baking sheet and drizzle with olive oil, then sprinkle with salt and pepper.
- Roast in the preheated oven for 20 minutes, or until the tomatoes are blistered and soft.
- While the tomatoes are roasting, finely chop the onion and cilantro.
- Once the tomatoes and chilies are done, remove them from the oven and let them cool slightly.
- In a blender or food processor, combine the roasted tomatoes, chilies, garlic, onion, cilantro, and lime juice. Blend until you reach your desired consistency.
- Taste and adjust seasoning with additional salt, if necessary.
- Serve the salsa at room temperature or chilled with tacos or tortilla chips.
