Ingredients

  • Tomatoes - 400 grams
  • Serrano chilies - 2
  • Garlic cloves - 2
  • Onion - 1 small (about 100 grams)
  • Cilantro - 15 grams
  • Lime juice - 15 ml
  • Olive oil - 1 tablespoon (15 ml)
  • Salt - 1 teaspoon (5 grams)
  • Black pepper - 1/2 teaspoon (2 grams)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the tomatoes, serrano chilies, and garlic cloves on a baking sheet and drizzle with olive oil, then sprinkle with salt and pepper.
  3. Roast in the preheated oven for 20 minutes, or until the tomatoes are blistered and soft.
  4. While the tomatoes are roasting, finely chop the onion and cilantro.
  5. Once the tomatoes and chilies are done, remove them from the oven and let them cool slightly.
  6. In a blender or food processor, combine the roasted tomatoes, chilies, garlic, onion, cilantro, and lime juice. Blend until you reach your desired consistency.
  7. Taste and adjust seasoning with additional salt, if necessary.
  8. Serve the salsa at room temperature or chilled with tacos or tortilla chips.
