Ingredients

  • Tomatoes - 400 grams
  • Garlic - 3 cloves
  • Onion - 1 medium, diced
  • Jalapeño - 1, seeds removed and chopped
  • Cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the tomatoes in half and place them on a baking sheet with the garlic cloves (unpeeled) and jalapeño.
  3. Drizzle olive oil over the tomatoes and jalapeño, then sprinkle with salt and black pepper.
  4. Roast in the oven for 20 minutes, or until the tomatoes are slightly charred.
  5. While the tomatoes are roasting, heat a skillet over medium heat and sauté the diced onion until translucent (about 5 minutes).
  6. Once the tomatoes are roasted, remove them from the oven and let them cool slightly.
  7. In a blender, combine the roasted tomatoes, garlic (squeeze out of the skins), jalapeño, sautéed onion, cilantro, and lime juice. Blend until smooth.
  8. Taste and adjust seasoning if necessary, adding more salt or lime juice to your preference.
  9. Serve the Salsa Roja Casera warm or at room temperature with your favorite BBQ dishes.
