Ingredients
- Tomatoes - 400 grams
- Garlic - 3 cloves
- Onion - 1 medium, diced
- Jalapeño - 1, seeds removed and chopped
- Cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Cut the tomatoes in half and place them on a baking sheet with the garlic cloves (unpeeled) and jalapeño.
- Drizzle olive oil over the tomatoes and jalapeño, then sprinkle with salt and black pepper.
- Roast in the oven for 20 minutes, or until the tomatoes are slightly charred.
- While the tomatoes are roasting, heat a skillet over medium heat and sauté the diced onion until translucent (about 5 minutes).
- Once the tomatoes are roasted, remove them from the oven and let them cool slightly.
- In a blender, combine the roasted tomatoes, garlic (squeeze out of the skins), jalapeño, sautéed onion, cilantro, and lime juice. Blend until smooth.
- Taste and adjust seasoning if necessary, adding more salt or lime juice to your preference.
- Serve the Salsa Roja Casera warm or at room temperature with your favorite BBQ dishes.
