Ingredients
- Pizza dough - 1 round (approximately 250g)
- Poblano peppers - 2 medium
- Red onion - 1 medium, thinly sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Corn kernels - 100g (fresh or frozen)
- Vegan cheese - 100g (shredded)
- Cashews - 50g (soaked in water for at least 2 hours)
- Lemon juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- Roast the poblano peppers on a baking sheet for about 15 minutes, turning occasionally, until the skin is blistered and charred. Remove from the oven, place in a bowl, and cover with plastic wrap to steam for 10 minutes.
- Once cooled, peel the skin off the poblano peppers, remove the seeds, and slice them into strips.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced red onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for another minute.
- Stir in the roasted poblano strips and corn kernels, and cook for an additional 2-3 minutes. Season with salt and black pepper to taste. Remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness and place it on a baking sheet or pizza stone.
- Spread the sautéed vegetable mixture evenly over the pizza dough. Sprinkle the vegan cheese on top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese has melted.
- While the pizza is baking, prepare the cashew cream by blending the soaked cashews, lemon juice, nutritional yeast, a pinch of salt, and enough water to achieve a smooth consistency.
- Once the pizza is done, remove it from the oven and drizzle the cashew cream over the top. Garnish with fresh cilantro before slicing and serving.
