Ingredients
- Ground beef - 300 grams
- Poblano peppers - 2 medium
- Red onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Queso fresco - 100 grams, crumbled
- Avocado - 1 medium, sliced
- Lettuce leaves - 4 large
- Gluten-free burger buns - 2
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat a grill or grill pan over medium-high heat.
- Roast the poblano peppers on the grill until the skin is charred, about 8-10 minutes, turning occasionally. Once charred, place them in a bowl covered with plastic wrap to steam for 10 minutes.
- While the peppers are steaming, in a mixing bowl, combine the ground beef, minced garlic, cumin, salt, and black pepper. Form the mixture into 2 patties.
- Remove the skins from the roasted poblano peppers, slice them open, and remove the seeds. Cut the peppers into strips.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced red onion and sauté until translucent, about 5 minutes. Add the roasted poblano strips and sauté for another 2-3 minutes. Season with a pinch of salt.
- In the same skillet, add the remaining tablespoon of olive oil and cook the beef patties for about 4-5 minutes per side or until they reach your desired doneness.
- Toast the gluten-free burger buns on the grill for 1-2 minutes until golden.
- Assemble the burgers: Start with the bottom bun, add a lettuce leaf, place the cooked beef patty, top with the sautéed rajas (poblano and onion), sprinkle with crumbled queso fresco, and finish with avocado slices. Top with the other half of the bun.
- Serve immediately with your choice of sides.
