Ingredients

  • Poblano peppers - 2 large
  • Red onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Corn - 1 cup, fresh or frozen
  • Coconut cream - 1/4 cup
  • Oregano - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the poblano peppers on a baking sheet and roast in the oven for 15-20 minutes, turning occasionally, until the skin is blistered and charred.
  3. Remove the peppers from the oven and place them in a sealed plastic bag for 10 minutes to steam. This will help loosen the skin.
  4. In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and sauté for about 5 minutes until translucent.
  5. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  6. While the onions and garlic are cooking, peel the skins off the roasted poblano peppers, remove the seeds, and slice them into strips.
  7. Add the sliced poblano peppers and corn to the skillet, stirring to combine. Cook for another 5 minutes.
  8. Stir in the coconut cream, oregano, cumin, salt, and black pepper. Cook for an additional 3-4 minutes until everything is heated through.
  9. Remove from heat and stir in the lime juice and fresh cilantro before serving.
