- Poblano peppers - 2 large
- Red onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Corn - 1 cup, fresh or frozen
- Coconut cream - 1/4 cup
- Oregano - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Place the poblano peppers on a baking sheet and roast in the oven for 15-20 minutes, turning occasionally, until the skin is blistered and charred.
- Remove the peppers from the oven and place them in a sealed plastic bag for 10 minutes to steam. This will help loosen the skin.
- In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- While the onions and garlic are cooking, peel the skins off the roasted poblano peppers, remove the seeds, and slice them into strips.
- Add the sliced poblano peppers and corn to the skillet, stirring to combine. Cook for another 5 minutes.
- Stir in the coconut cream, oregano, cumin, salt, and black pepper. Cook for an additional 3-4 minutes until everything is heated through.
- Remove from heat and stir in the lime juice and fresh cilantro before serving.
