Ingredients

  • Cauliflower - 400 grams, riced
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Almond flour - 30 grams
  • Olive oil - 1 tablespoon
  • Poblano peppers - 2 medium, roasted and sliced
  • Red onion - 50 grams, thinly sliced
  • Black olives - 30 grams, sliced
  • Tomato sauce - 100 grams (low-carb)
  • Cilantro - 10 grams, chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Sour cream - for topping (optional)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a large bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, olive oil, cumin, salt, and pepper. Mix until a dough forms.
  3. Spread the dough onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  4. Bake the crust in the preheated oven for about 15-20 minutes, or until golden brown and firm.
  5. While the crust is baking, prepare the toppings: roast the poblano peppers over an open flame or in the oven until charred, then peel and slice them.
  6. In a skillet, sauté the sliced red onion until translucent, about 5 minutes.
  7. Once the crust is done, spread the tomato sauce evenly over the crust.
  8. Layer the roasted poblano peppers, sautéed onions, and sliced black olives on top of the sauce.
  9. Sprinkle the remaining mozzarella cheese over the toppings.
  10. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with chopped cilantro, and let it cool slightly before slicing.
  12. Serve hot, with a dollop of sour cream on top if desired.
