- Egg - 1 large
- Almond flour - 30 grams
- Olive oil - 1 tablespoon
- Poblano peppers - 2 medium, roasted and sliced
- Red onion - 50 grams, thinly sliced
- Black olives - 30 grams, sliced
- Tomato sauce - 100 grams (low-carb)
- Cilantro - 10 grams, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Sour cream - for topping (optional)
Steps
- Preheat the oven to 220°C (425°F).
- In a large bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, olive oil, cumin, salt, and pepper. Mix until a dough forms.
- Spread the dough onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for about 15-20 minutes, or until golden brown and firm.
- While the crust is baking, prepare the toppings: roast the poblano peppers over an open flame or in the oven until charred, then peel and slice them.
- In a skillet, sauté the sliced red onion until translucent, about 5 minutes.
- Once the crust is done, spread the tomato sauce evenly over the crust.
- Layer the roasted poblano peppers, sautéed onions, and sliced black olives on top of the sauce.
- Sprinkle the remaining mozzarella cheese over the toppings.
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped cilantro, and let it cool slightly before slicing.
- Serve hot, with a dollop of sour cream on top if desired.
