Ingredients

  • Quinoa - 1 cup
  • Vegetable broth - 2 cups
  • Black beans - 1 can (400g), drained and rinsed
  • Corn kernels - 1/2 cup (fresh or frozen)
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Corn tortillas - 4
  • Fresh cilantro - for garnish
  • Avocado - 1 medium, sliced (optional)
  • Lime - 1, cut into wedges (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the quinoa under cold water, then combine with vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, cooking until softened, about 5 minutes.
  4. Stir in minced garlic, cumin, chili powder, salt, and black pepper. Cook for another minute until fragrant.
  5. Add the cooked quinoa, black beans, and corn to the skillet, mixing well to combine. Cook for an additional 2-3 minutes to heat through.
  6. Place the corn tortillas on a baking sheet and spoon the quinoa mixture evenly into each tortilla.
  7. Bake in the preheated oven for 10 minutes until the tortillas are slightly crispy.
  8. Remove from the oven and garnish with fresh cilantro and avocado slices, if desired. Serve with lime wedges.
