- Green bell pepper - 1 medium, diced
- Mushrooms - 100 grams, sliced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Jalapeño - 1 small, diced (optional)
- Corn tortillas - 4 pieces
- Lime - 1, cut into wedges
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and add the diced red and green bell peppers, mushrooms, red onion, and jalapeño (if using). Sauté for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
- In an oven-safe dish, combine the sautéed vegetables with the Oaxaca and Monterey Jack cheese. Stir until the cheese is evenly distributed among the vegetables.
- Place the dish in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
