  • Green bell pepper - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Jalapeño - 1 small, diced (optional)
  • Corn tortillas - 4 pieces
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and add the diced red and green bell peppers, mushrooms, red onion, and jalapeño (if using). Sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
