- Mozzarella cheese - 150 grams
- Oaxaca cheese - 100 grams
- Bell pepper (red) - 1 medium, diced
- Zucchini - 1 medium, diced
- Mushrooms (button) - 100 grams, sliced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Corn tortillas - 4, for serving
Steps
- Preheat your grill or BBQ to medium heat.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced bell pepper, zucchini, and sliced mushrooms to the skillet. Season with salt and black pepper, and cook for an additional 5-7 minutes until the vegetables are tender.
- In a mixing bowl, combine the mozzarella and Oaxaca cheese. Stir in the sautéed vegetables and lime juice until well mixed.
- Transfer the cheese and vegetable mixture into a cast-iron skillet or a heatproof dish.
- Place the skillet on the grill and cover, cooking for about 10-12 minutes or until the cheese is fully melted and bubbly.
- Remove from the grill and garnish with chopped cilantro.
- Serve immediately with warm corn tortillas on the side for dipping.
