Ingredients

  • Mozzarella cheese - 150 grams
  • Oaxaca cheese - 100 grams
  • Bell pepper (red) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms (button) - 100 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Corn tortillas - 4, for serving

Steps

  1. Preheat your grill or BBQ to medium heat.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Add the diced bell pepper, zucchini, and sliced mushrooms to the skillet. Season with salt and black pepper, and cook for an additional 5-7 minutes until the vegetables are tender.
  4. In a mixing bowl, combine the mozzarella and Oaxaca cheese. Stir in the sautéed vegetables and lime juice until well mixed.
  5. Transfer the cheese and vegetable mixture into a cast-iron skillet or a heatproof dish.
  6. Place the skillet on the grill and cover, cooking for about 10-12 minutes or until the cheese is fully melted and bubbly.
  7. Remove from the grill and garnish with chopped cilantro.
  8. Serve immediately with warm corn tortillas on the side for dipping.
