  • Corn tortillas - 4 small
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place in a bowl, cover, and let steam for 10 minutes before peeling and slicing them into strips.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the roasted poblano strips and season with salt and black pepper. Cook for another 2-3 minutes to combine the flavors.
  5. Reduce the heat to low and add the shredded Oaxaca cheese on top of the pepper mixture. Cover the skillet with a lid and let the cheese melt, about 5 minutes.
  6. While the cheese is melting, warm the corn tortillas in a separate skillet or on a griddle.
  7. Once the cheese is melted and bubbly, remove from heat and sprinkle with fresh cilantro.
  8. Serve immediately with warm tortillas for dipping.
