- Jalapeño - 1, finely chopped (optional)
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Tortillas (corn or flour) - for serving
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and jalapeño (if using) to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Stir in the sliced mushrooms, season with salt and pepper, and cook until the mushrooms are tender and have released their moisture, about 5-7 minutes.
- Remove the skillet from heat and stir in the lime juice and chopped cilantro.
- In a mixing bowl, combine the Oaxaca and Chihuahua cheeses. Mix well with the sautéed mushroom mixture.
- Transfer the cheese and mushroom mixture to a suitable baking dish and spread evenly.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
