- Cashews - 100 g
- Nutritional yeast - 2 tbsp
- Smoked paprika - 1 tsp
- Garlic powder - 1/2 tsp
- Lemon juice - 2 tbsp
- Olive oil - 1 tbsp
- Water - 100 ml
- Salt - 1/2 tsp
- Cilantro - 2 tbsp (chopped)
- Jalapeño - 1 (finely chopped, optional)
Steps
- Soak the cashews in water for at least 2 hours, or overnight for best results.
- Drain and rinse the soaked cashews, then add them to a blender or food processor.
- Add nutritional yeast, smoked paprika, garlic powder, lemon juice, olive oil, salt, and 100 ml of water to the blender.
- Blend until smooth and creamy, adding more water if necessary to achieve the desired consistency.
- Transfer the queso to a bowl and fold in the chopped cilantro and jalapeño if using.
- Taste and adjust seasoning as needed, then serve immediately or refrigerate for up to 3 days.
