Ingredients

  • Cashews - 100 g
  • Nutritional yeast - 2 tbsp
  • Smoked paprika - 1 tsp
  • Garlic powder - 1/2 tsp
  • Lemon juice - 2 tbsp
  • Olive oil - 1 tbsp
  • Water - 100 ml
  • Salt - 1/2 tsp
  • Cilantro - 2 tbsp (chopped)
  • Jalapeño - 1 (finely chopped, optional)

Steps

  1. Soak the cashews in water for at least 2 hours, or overnight for best results.
  2. Drain and rinse the soaked cashews, then add them to a blender or food processor.
  3. Add nutritional yeast, smoked paprika, garlic powder, lemon juice, olive oil, salt, and 100 ml of water to the blender.
  4. Blend until smooth and creamy, adding more water if necessary to achieve the desired consistency.
  5. Transfer the queso to a bowl and fold in the chopped cilantro and jalapeño if using.
  6. Taste and adjust seasoning as needed, then serve immediately or refrigerate for up to 3 days.
