  • Raw cashews - 100 grams

  • Onion powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 120 milliliters
  • Chopped fresh cilantro - 2 tablespoons (for garnish)
  • Chopped jalapeños - 1 tablespoon (optional, for heat)

Steps

  1. Soak the raw cashews in water for at least 2 hours, then drain and rinse them.
  2. In a blender, combine the soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, cumin, smoked paprika, salt, and water.
  3. Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
  5. Transfer the queso to a small pot and heat over low heat, stirring frequently until warmed through.
