Ingredients

  • Corn tortillas - 4
  • Mixed mushrooms (shiitake, oyster, and portobello) - 200 grams, sliced
  • Nutritional yeast - 2 tablespoons
  • Vegan cheese (shredded) - 100 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and browned, about 5-7 minutes.
  3. Stir in nutritional yeast, lime juice, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat. Fold in chopped cilantro.
  4. Preheat another skillet over medium heat. Place one corn tortilla in the skillet and sprinkle half of the vegan cheese on one half of the tortilla.
  5. Spoon half of the mushroom mixture over the cheese, then fold the tortilla in half. Cook until the tortilla is golden and the cheese is melted, about 3-4 minutes per side.
  6. Remove from skillet and repeat the process with the second tortilla, remaining cheese, and mushroom mixture.
  7. Cut the quesadillas into wedges and serve warm with your favorite salsa or guacamole.
