- Corn tortillas - 4
- Mixed mushrooms (shiitake, oyster, and portobello) - 200 grams, sliced
- Nutritional yeast - 2 tablespoons
- Vegan cheese (shredded) - 100 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and browned, about 5-7 minutes.
- Stir in nutritional yeast, lime juice, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat. Fold in chopped cilantro.
- Preheat another skillet over medium heat. Place one corn tortilla in the skillet and sprinkle half of the vegan cheese on one half of the tortilla.
- Spoon half of the mushroom mixture over the cheese, then fold the tortilla in half. Cook until the tortilla is golden and the cheese is melted, about 3-4 minutes per side.
- Remove from skillet and repeat the process with the second tortilla, remaining cheese, and mushroom mixture.
- Cut the quesadillas into wedges and serve warm with your favorite salsa or guacamole.
