Ingredients
- Corn tortillas - 4 pieces
- Poblano peppers - 2 medium, sliced
- Onion - 1 medium, thinly sliced
- Cheese (e.g., Oaxaca or mozzarella) - 200 grams, shredded
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- Heat the olive oil in a skillet over medium heat.
- Add the sliced onions and sauté for about 3 minutes until they start to soften.
- Add the sliced poblano peppers, salt, and black pepper; cook for another 5-7 minutes until the peppers are tender.
- Remove the skillet from heat and set the vegetable mixture aside.
- In the same skillet, place one corn tortilla and sprinkle half of the shredded cheese evenly over it.
- Add half of the sautéed poblano and onion mixture on top of the cheese.
- Top with another layer of cheese and cover with another tortilla.
- Cook for about 3-4 minutes on each side, until the tortillas are golden brown and the cheese is melted.
- Repeat the process with the remaining ingredients to make the second quesadilla.
- Cut each quesadilla into wedges, garnish with chopped cilantro, and serve with lime wedges.
