Ingredients

  • Corn tortillas - 4 pieces
  • Poblano peppers - 2 medium, sliced
  • Onion - 1 medium, thinly sliced
  • Cheese (e.g., Oaxaca or mozzarella) - 200 grams, shredded
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced onions and sauté for about 3 minutes until they start to soften.
  3. Add the sliced poblano peppers, salt, and black pepper; cook for another 5-7 minutes until the peppers are tender.
  4. Remove the skillet from heat and set the vegetable mixture aside.
  5. In the same skillet, place one corn tortilla and sprinkle half of the shredded cheese evenly over it.
  6. Add half of the sautéed poblano and onion mixture on top of the cheese.
  7. Top with another layer of cheese and cover with another tortilla.
  8. Cook for about 3-4 minutes on each side, until the tortillas are golden brown and the cheese is melted.
  9. Repeat the process with the remaining ingredients to make the second quesadilla.
  10. Cut each quesadilla into wedges, garnish with chopped cilantro, and serve with lime wedges.
