- Oaxaca cheese - 200 grams
- Corn tortillas - 4 pieces
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Jalapeño - 1, sliced (optional)
- Sour cream - 4 tablespoons (for serving)
- Salsa - 4 tablespoons (for serving)
Steps
- Begin by shredding the Oaxaca cheese into thin strands.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Place one corn tortilla in the skillet and sprinkle half of the shredded Oaxaca cheese evenly over it.
- If desired, add sliced jalapeño on top of the cheese for a spicy kick.
- Place another corn tortilla on top and gently press down to help the cheese melt.
- Cook for about 3-4 minutes, or until the bottom tortilla is golden brown.
- Carefully flip the quesadilla and add the remaining tablespoon of olive oil to the skillet.
- Cook for another 3-4 minutes until the second tortilla is golden and the cheese is melted.
- Remove from the skillet and cut into wedges.
- Garnish with chopped cilantro and serve with sour cream and salsa on the side.
