- Black pepper - 1/2 teaspoon
- Tortillas (flour or corn) - 4 pieces
- Shredded cheese (cheddar or mozzarella) - 150 grams
- Sour cream - 2 tablespoons (for serving)
- Fresh cilantro - 2 tablespoons (chopped, for garnish)
Steps
- In a bowl, combine olive oil, lime juice, garlic powder, cumin, paprika, salt, and black pepper to create a marinade.
- Cut the chicken breast into thin strips and add to the marinade, ensuring the chicken is well-coated. Let it marinate for at least 15 minutes.
- Heat a grill or skillet over medium heat. Cook the marinated chicken for about 6-8 minutes, or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a couple of minutes.
- To assemble the quesadillas, place a tortilla in the skillet, add a layer of cheese, then top with cooked chicken strips, followed by another layer of cheese and a second tortilla.
- Cook for 2-3 minutes on one side or until golden and crispy, then carefully flip and cook the other side for another 2-3 minutes.
- Repeat the process for the second quesadilla. Once cooked, remove from heat and cut into wedges.
- Serve hot with sour cream and garnish with fresh cilantro.
