- Almond Flour Tortillas - 2
- Butter - 1 tablespoon
- Diced Green Bell Pepper - 50g
- Diced Onion - 30g
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Chopped Fresh Cilantro - 2 tablespoons
- Sour Cream - for serving (optional)
Steps
- In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
- In a skillet over medium heat, melt the butter. Add the diced onion and green bell pepper, cooking until softened, about 3-4 minutes.
- Pour the egg mixture into the skillet with the vegetables and cook, stirring occasionally, until the eggs are scrambled and just set, about 3-5 minutes. Remove from heat and stir in the shredded cheddar cheese and chopped cilantro.
- In another skillet, heat the almond flour tortillas over medium heat for about 30 seconds on each side until warm.
- Divide the egg and cheese mixture between the two tortillas, folding them in half to create quesadillas.
- Cook each quesadilla in the skillet for 1-2 minutes on each side until golden and crispy. Remove from heat and cut in half.
