  • Diced Green Bell Pepper - 50g
  • Diced Onion - 30g
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Chopped Fresh Cilantro - 2 tablespoons
  • Sour Cream - for serving (optional)

Steps

  1. In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. In a skillet over medium heat, melt the butter. Add the diced onion and green bell pepper, cooking until softened, about 3-4 minutes.
  3. Pour the egg mixture into the skillet with the vegetables and cook, stirring occasionally, until the eggs are scrambled and just set, about 3-5 minutes. Remove from heat and stir in the shredded cheddar cheese and chopped cilantro.
