- Portobello mushrooms - 200 grams, sliced
- Button mushrooms - 100 grams, sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Oaxaca cheese (or mozzarella) - 150 grams, shredded
- Corn tortillas - 4 large
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Heat the olive oil in a skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced Portobello and button mushrooms to the skillet and cook for about 5-7 minutes until they are tender and browned.
- Stir in the cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes to incorporate the spices.
- Remove the mushroom mixture from the heat and set aside.
- In the same skillet, place a corn tortilla over medium heat. Sprinkle half of the tortilla with a portion of the shredded Oaxaca cheese.
- Add a generous amount of the mushroom mixture on top of the cheese, then sprinkle with more cheese before folding the tortilla in half.
- Cook for 2-3 minutes on each side until the cheese is melted and the tortilla is golden brown.
- Repeat the process for the second quesadilla.
- Serve hot, garnished with chopped cilantro and lime wedges.
