- Tortillas - 4 pieces (preferably corn)
- Squash blossoms - 200 grams (cleaned and trimmed)
- Oaxaca cheese or mozzarella - 150 grams (shredded)
- Onion - 1 small (finely chopped)
- Garlic - 1 clove (minced)
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons (chopped, for garnish)
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent (about 3-4 minutes).
- Add the cleaned squash blossoms to the skillet, cooking for another 3-5 minutes until they soften. Season with salt and black pepper to taste.
- Remove the mixture from the heat and let it cool slightly. In a bowl, combine the sautéed squash blossoms and shredded cheese, mixing well.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Place one tortilla in the skillet and spread half of the squash blossom and cheese mixture on one half of the tortilla.
- Fold the tortilla over to create a half-moon shape and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the second tortilla. Once cooked, remove from the skillet and let cool for a minute before cutting into wedges.
- Garnish with chopped cilantro and serve warm.
