- Corn tortillas - 4 medium-sized
- Low-fat cheese (such as Oaxaca or mozzarella) - 100 grams, shredded
- Red bell pepper - 1 medium, diced
- Onion - 1 small, finely chopped
- Fresh spinach - 100 grams, chopped
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a skillet, heat the olive oil over medium heat. Add the onions and garlic, sautéing until translucent, about 3-4 minutes.
- Add the pork spine pieces to the skillet, seasoning with cumin, salt, and pepper. Cook until the meat is browned and cooked through, about 10-12 minutes.
- Stir in the diced red bell pepper and chopped spinach, cooking until the spinach is wilted, about 2-3 minutes. Remove from heat.
- In another skillet, warm the corn tortillas one at a time over medium heat for about 30 seconds on each side.
- Place a quarter of the pork mixture on one half of each tortilla, sprinkle with shredded cheese, and fold the tortilla over.
- Cook each quesadilla in the skillet for about 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden brown.
- Remove from heat, cut into wedges, and garnish with fresh cilantro before serving.
