  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Fresh spinach - 100 grams, chopped
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the onions and garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the pork spine pieces to the skillet, seasoning with cumin, salt, and pepper. Cook until the meat is browned and cooked through, about 10-12 minutes.
  3. Stir in the diced red bell pepper and chopped spinach, cooking until the spinach is wilted, about 2-3 minutes. Remove from heat.
  4. In another skillet, warm the corn tortillas one at a time over medium heat for about 30 seconds on each side.
  5. Place a quarter of the pork mixture on one half of each tortilla, sprinkle with shredded cheese, and fold the tortilla over.
  6. Cook each quesadilla in the skillet for about 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden brown.
  7. Remove from heat, cut into wedges, and garnish with fresh cilantro before serving.
