Ingredients

  • Olive oil - 2 tablespoons
  • Mushrooms (sliced) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Bell pepper (sliced) - 1 small
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegan cheese (shredded) - 100 grams
  • Corn tortillas - 4
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime (cut into wedges) - 1

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté for about 3 minutes until translucent.
  3. Stir in minced garlic and sliced bell pepper, cooking for another 2 minutes.
  4. Add the sliced mushrooms, cumin, paprika, salt, and black pepper, and cook for approximately 8-10 minutes until mushrooms are tender and liquid has evaporated.
  5. Remove the mushroom mixture from heat and stir in chopped cilantro.
  6. In the same skillet, place one tortilla and sprinkle half of the vegan cheese on one half.
  7. Spoon half of the mushroom mixture over the cheese and fold the tortilla in half.
  8. Cook for about 3-4 minutes on each side until the tortilla is golden and crispy and the cheese has melted.
  9. Repeat with the second tortilla and remaining ingredients.
  10. Serve warm with lime wedges on the side.
