- Mushrooms (sliced) - 200 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Bell pepper (sliced) - 1 small
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegan cheese (shredded) - 100 grams
- Corn tortillas - 4
- Fresh cilantro (chopped) - 2 tablespoons
- Lime (cut into wedges) - 1
Steps
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté for about 3 minutes until translucent.
- Stir in minced garlic and sliced bell pepper, cooking for another 2 minutes.
- Add the sliced mushrooms, cumin, paprika, salt, and black pepper, and cook for approximately 8-10 minutes until mushrooms are tender and liquid has evaporated.
- Remove the mushroom mixture from heat and stir in chopped cilantro.
- In the same skillet, place one tortilla and sprinkle half of the vegan cheese on one half.
- Spoon half of the mushroom mixture over the cheese and fold the tortilla in half.
- Cook for about 3-4 minutes on each side until the tortilla is golden and crispy and the cheese has melted.
- Repeat with the second tortilla and remaining ingredients.
- Serve warm with lime wedges on the side.
