Ingredients

  • Beef chuck roast - 500 grams
  • Beef broth - 500 ml
  • Dried guajillo chilies - 2 units
  • Dried pasilla chilies - 2 units
  • Garlic cloves - 3 units
  • Onion - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1 unit, juiced
  • Grated Oaxaca cheese - 150 grams
  • Almond flour tortillas - 4 units
  • Fresh cilantro - for garnish

Steps

  1. Start by preparing the chilies: remove the stems and seeds from the guajillo and pasilla chilies. Soak them in hot water for about 15 minutes until softened.
  2. In a blender, combine the soaked chilies, garlic, cumin, oregano, salt, black pepper, and beef broth. Blend until smooth to create the sauce.
  3. In a large pot, heat a little oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the beef chuck roast to the pot and sear it on all sides, about 5-7 minutes. Then pour the blended sauce over the meat.
  5. Bring the mixture to a simmer, cover, and cook on low heat for about 2 hours, or until the beef is fork-tender.
  6. Once cooked, shred the beef using two forks and mix it back into the sauce. Adjust seasoning with lime juice if needed.
  7. In a non-stick skillet, heat a tortilla for about 30 seconds on one side. Flip it over, add a portion of the shredded beef and top with grated cheese. Fold the tortilla in half and cook until the cheese melts and the tortilla is crispy, about 2-3 minutes.
  8. Repeat with the remaining tortillas and beef mixture. Serve hot, garnished with fresh cilantro.
