  • erythritol or preferred low-carb sweetener - 3 tablespoons
  • unsweetened almond milk - 250 ml
  • heavy cream - 100 ml
  • vanilla extract - 1 teaspoon
  • gelatin powder - 1 teaspoon
  • water - 2 tablespoons

Steps

  1. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of water and let it bloom for about 5 minutes.
  2. In a medium saucepan, combine the unsweetened almond milk, heavy cream, unsweetened cocoa powder, erythritol, and vanilla extract.
  3. Heat the mixture over medium heat, stirring constantly until the cocoa and sweetener are fully dissolved and the mixture is heated through but not boiling.
  4. Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved.
  5. Pour the mixture into two serving cups or ramekins and refrigerate for at least 2 hours, or until set.
