Ingredients

  • Chicken breast - 250 grams
  • Dried hominy - 100 grams
  • Tomatillos - 200 grams
  • Fresh cilantro - 1 cup, packed
  • Green onion - 2 stalks
  • Garlic - 2 cloves
  • Lime - 1, juiced
  • Vegetable broth - 4 cups
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Avocado - 1 small, for garnish
  • Radishes - 4, for garnish

Steps

  1. Soak the dried hominy in water for at least 4 hours or overnight. Drain and rinse before cooking.
  2. In a large pot, combine the soaked hominy with 4 cups of vegetable broth, bring to a boil, and then reduce heat to a simmer. Cook for about 60 minutes or until the hominy is tender.
  3. While the hominy is cooking, prepare the green sauce. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the tomatillos, chopped green onions, and minced garlic. Sauté for about 5-7 minutes until the tomatillos are soft and slightly charred.
  4. Transfer the sautéed tomatillo mixture to a blender. Add the cilantro and lime juice, and blend until smooth. Adjust salt and pepper to taste.
  5. Once the hominy is cooked, add the chicken breast to the pot and cook for an additional 15 minutes or until the chicken is fully cooked. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the green sauce into the pot with hominy and chicken. Let it simmer for 5 more minutes to combine flavors.
  7. Serve hot, garnished with sliced avocado and radishes.
