- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Tomato sauce - 1 cup (240ml)
- Dried oregano - 1 teaspoon (5g)
- Ground cumin - 1 teaspoon (5g)
- Smoked paprika - 1 teaspoon (5g)
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Lime wedges - for serving
Steps
- Rinse the dried hominy under cold water and soak it in water for at least 8 hours or overnight.
- After soaking, drain the hominy and add it to a large pot with 4 cups of vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the hominy is tender.
- In a separate pan, heat olive oil over medium heat. Add diced onion and sauté for 5 minutes until translucent.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the diced red bell pepper, zucchini, and carrot. Cook for another 5-7 minutes until the vegetables are tender.
- Add the tomato sauce, dried oregano, ground cumin, smoked paprika, salt, and pepper to the vegetable mixture. Stir well and let it simmer for 5 minutes.
- Combine the vegetable mixture with the cooked hominy in the pot. Stir to combine and let it simmer for another 10-15 minutes to meld the flavors.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and lime wedges.
