Ingredients
- Pork ribs - 800 grams
- Garlic - 4 cloves, minced
- Dried guajillo chilies - 4, seeds removed
- Dried ancho chilies - 2, seeds removed
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Apple cider vinegar - 60 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 ml
- Lime - 1, juiced
Steps
- Soak the guajillo and ancho chilies in hot water for about 15 minutes until softened.
- In a blender, combine the soaked chilies, minced garlic, cumin, oregano, paprika, apple cider vinegar, olive oil, salt, and black pepper. Blend until smooth.
- Place the pork ribs in a large bowl and pour the marinade over them. Ensure the ribs are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
- Preheat your grill or BBQ to a medium heat.
- Remove the ribs from the marinade, allowing excess marinade to drip off. Reserve the marinade.
- Place the ribs on the grill and cook for about 30-40 minutes, turning occasionally and basting with the reserved marinade every 10 minutes.
- Cook until the ribs are tender and have a nice char, with a meat thermometer reading at least 70°C (160°F).
- Remove from the grill, let rest for 5 minutes, then squeeze fresh lime juice over the ribs before serving.
