Ingredients

  • Pork ribs - 800 grams
  • Garlic - 4 cloves, minced
  • Dried guajillo chilies - 4, seeds removed
  • Dried ancho chilies - 2, seeds removed
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Apple cider vinegar - 60 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 ml
  • Lime - 1, juiced

Steps

  1. Soak the guajillo and ancho chilies in hot water for about 15 minutes until softened.
  2. In a blender, combine the soaked chilies, minced garlic, cumin, oregano, paprika, apple cider vinegar, olive oil, salt, and black pepper. Blend until smooth.
  3. Place the pork ribs in a large bowl and pour the marinade over them. Ensure the ribs are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
  4. Preheat your grill or BBQ to a medium heat.
  5. Remove the ribs from the marinade, allowing excess marinade to drip off. Reserve the marinade.
  6. Place the ribs on the grill and cook for about 30-40 minutes, turning occasionally and basting with the reserved marinade every 10 minutes.
  7. Cook until the ribs are tender and have a nice char, with a meat thermometer reading at least 70°C (160°F).
  8. Remove from the grill, let rest for 5 minutes, then squeeze fresh lime juice over the ribs before serving.
