- Pork shoulder - 500 grams, cut into 1-inch cubes
- Tomatillos - 300 grams, husked and quartered
- Green bell pepper - 1 medium, chopped
- Jalapeño - 1 medium, seeded and chopped
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Cilantro - 1/4 cup, chopped
- Chicken broth - 250 ml
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Heat olive oil in a large pot over medium heat. Add the pork cubes and sear until browned on all sides, about 5-7 minutes.
- Remove the pork and set aside. In the same pot, add the onion, garlic, green bell pepper, and jalapeño. Sauté for 5 minutes until softened.
- Add the tomatillos, cumin, salt, and black pepper to the pot. Stir to combine and cook for another 5 minutes.
- Return the pork to the pot and add the chicken broth. Bring to a boil, then reduce the heat to low and cover.
- Simmer for 60-70 minutes, or until the pork is tender and the flavors have melded.
- Stir in the chopped cilantro just before serving. Adjust seasoning if necessary.
