- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Chicken broth - 100 ml
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Cheddar cheese - 100 grams, shredded
- Avocado - 1 medium, sliced (for serving)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until soft, about 5 minutes.
- Add the minced garlic, cumin, chili powder, salt, and black pepper to the skillet, stirring for an additional minute until fragrant.
- Cut the pork shoulder into small chunks and add to the skillet. Sear the pork on all sides for about 5-7 minutes.
- Pour in the chicken broth and lime juice, stirring to combine. Bring the mixture to a simmer.
- Transfer everything to a baking dish and cover with aluminum foil. Bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
- Return the dish to the oven and bake uncovered for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, garnish with chopped cilantro, and serve hot with sliced avocado on the side.
