  • Pork shoulder - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Chicken broth - 100 ml
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Cheddar cheese - 100 grams, shredded
  • Avocado - 1 medium, sliced (for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until soft, about 5 minutes.
  3. Add the minced garlic, cumin, chili powder, salt, and black pepper to the skillet, stirring for an additional minute until fragrant.
  4. Cut the pork shoulder into small chunks and add to the skillet. Sear the pork on all sides for about 5-7 minutes.
  5. Pour in the chicken broth and lime juice, stirring to combine. Bring the mixture to a simmer.
  6. Transfer everything to a baking dish and cover with aluminum foil. Bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
  8. Return the dish to the oven and bake uncovered for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven, garnish with chopped cilantro, and serve hot with sliced avocado on the side.
