- Pineapple - 100 grams (fresh, diced)
- White onion - 50 grams (finely chopped)
- Cilantro - 10 grams (chopped)
- Garlic - 2 cloves (minced)
- Chipotle pepper in adobo - 1 (finely chopped)
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Lime juice - 1 tablespoon

Steps
- In a bowl, combine minced garlic, chipotle pepper, oregano, cumin, salt, pepper, lime juice, and olive oil to create a marinade.

- Preheat your grill or grill pan over medium-high heat.
- Once hot, add the marinated pork strips and cook for about 5-7 minutes on each side, or until the pork is well charred and cooked through.
- During the last few minutes of cooking, add the diced pineapple to the grill to caramelize slightly.
- Remove the pork and pineapple from the grill and let it rest for a few minutes.
- Slice the pork into bite-sized pieces and mix with the grilled pineapple.
- Serve the pork and pineapple mixture in large lettuce leaves, topped with chopped onion and cilantro.
