- Pork shoulder - 400 grams
- Dried guajillo chiles - 3
- Dried ancho chiles - 2
- Garlic cloves - 4
- Apple cider vinegar - 60 ml
- Ground cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 120 ml
- Lime - 1 (for serving)
Steps
- Begin by removing the stems and seeds from the dried guajillo and ancho chiles. Toast them lightly in a dry skillet over medium heat for about 2-3 minutes until fragrant.
- In a blender, combine the toasted chiles, garlic cloves, apple cider vinegar, ground cumin, oregano, salt, and black pepper. Blend until smooth, adding a little chicken broth if necessary to help blend.
- Cut the pork shoulder into 2-3 inch pieces and place them in a mixing bowl. Pour the adobo sauce over the pork, ensuring all pieces are well coated. Cover and marinate for at least 30 minutes, preferably in the refrigerator for a few hours or overnight.
- In a large skillet, heat olive oil over medium-high heat. Add the marinated pork pieces, searing them on all sides until browned, about 4-5 minutes.
- Add the remaining chicken broth to the skillet, reduce the heat to low, cover, and simmer for about 30 minutes, or until the pork is tender and cooked through.
- Serve the Pork Adobada hot, garnished with lime wedges on the side.
