Ingredients

  • Pork shoulder - 400 grams
  • Dried guajillo chiles - 3
  • Dried ancho chiles - 2
  • Garlic cloves - 4
  • Apple cider vinegar - 60 ml
  • Ground cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken broth - 120 ml
  • Lime - 1 (for serving)

Steps

  1. Begin by removing the stems and seeds from the dried guajillo and ancho chiles. Toast them lightly in a dry skillet over medium heat for about 2-3 minutes until fragrant.
  2. In a blender, combine the toasted chiles, garlic cloves, apple cider vinegar, ground cumin, oregano, salt, and black pepper. Blend until smooth, adding a little chicken broth if necessary to help blend.
  3. Cut the pork shoulder into 2-3 inch pieces and place them in a mixing bowl. Pour the adobo sauce over the pork, ensuring all pieces are well coated. Cover and marinate for at least 30 minutes, preferably in the refrigerator for a few hours or overnight.
  4. In a large skillet, heat olive oil over medium-high heat. Add the marinated pork pieces, searing them on all sides until browned, about 4-5 minutes.
  5. Add the remaining chicken broth to the skillet, reduce the heat to low, cover, and simmer for about 30 minutes, or until the pork is tender and cooked through.
  6. Serve the Pork Adobada hot, garnished with lime wedges on the side.
