Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Orange juice - 60 milliliters
  • Lime juice - 30 milliliters
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 1/4 cup, chopped
  • Avocado - 1 medium, sliced
  • Red onion - 1/2, thinly sliced
  • Corn tortillas - 4 pieces

Steps

  1. In a bowl, combine the olive oil, orange juice, lime juice, minced garlic, cumin, paprika, oregano, salt, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. To serve, place sliced pollo asado on the warmed tortillas, and top with sliced avocado, red onion, and chopped cilantro.
