- Orange juice - 60 milliliters
- Lime juice - 30 milliliters
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 1/4 cup, chopped
- Avocado - 1 medium, sliced
- Red onion - 1/2, thinly sliced
- Corn tortillas - 4 pieces
Steps
- In a bowl, combine the olive oil, orange juice, lime juice, minced garlic, cumin, paprika, oregano, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- To serve, place sliced pollo asado on the warmed tortillas, and top with sliced avocado, red onion, and chopped cilantro.
