Ingredients
- 2 large poblano peppers
- 100 grams quinoa, rinsed
- 200 ml vegetable broth
- 100 grams canned black beans, drained and rinsed
- 50 grams corn kernels (fresh or frozen)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 2 tablespoons olive oil
- Fresh cilantro - for garnish
- Lime wedges - for serving
Steps
- Preheat your grill or oven to 200°C (400°F).
- In a saucepan, combine the rinsed quinoa and vegetable broth; bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and garlic, sauté until translucent (about 5 minutes).
- Stir in the black beans, corn, cooked quinoa, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to heat through. Remove from heat.
- Carefully char the poblano peppers on the grill or under the broiler until the skin is blistered and blackened (about 8-10 minutes). Remove from heat and let them cool slightly.
- Once cooled, carefully peel off the charred skin, making a slit down one side of each pepper to create an opening for stuffing.
- Stuff each poblano pepper with the quinoa mixture, pressing down gently to pack it in.
- Brush the outside of the stuffed peppers with the remaining olive oil and place them back on the grill or in the oven. Cook for an additional 10-15 minutes until heated through and slightly crispy on the outside.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.
