Ingredients

  • 2 large poblano peppers
  • 100 grams quinoa, rinsed
  • 200 ml vegetable broth
  • 100 grams canned black beans, drained and rinsed
  • 50 grams corn kernels (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons olive oil
  • Fresh cilantro - for garnish
  • Lime wedges - for serving

Steps

  1. Preheat your grill or oven to 200°C (400°F).
  2. In a saucepan, combine the rinsed quinoa and vegetable broth; bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  3. While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and garlic, sauté until translucent (about 5 minutes).
  4. Stir in the black beans, corn, cooked quinoa, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to heat through. Remove from heat.
  5. Carefully char the poblano peppers on the grill or under the broiler until the skin is blistered and blackened (about 8-10 minutes). Remove from heat and let them cool slightly.
  6. Once cooled, carefully peel off the charred skin, making a slit down one side of each pepper to create an opening for stuffing.
  7. Stuff each poblano pepper with the quinoa mixture, pressing down gently to pack it in.
  8. Brush the outside of the stuffed peppers with the remaining olive oil and place them back on the grill or in the oven. Cook for an additional 10-15 minutes until heated through and slightly crispy on the outside.
  9. Serve hot, garnished with fresh cilantro and lime wedges on the side.
