Ingredients

  • Poblano peppers - 2 large
  • Yellow onion - 1 medium (about 150g)
  • Garlic - 2 cloves
  • Heavy cream - 120ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered, about 5-7 minutes. Place them in a plastic bag to steam for 10 minutes, then peel off the skin, remove the seeds, and slice into strips.
  2. While the peppers are steaming, thinly slice the yellow onion and mince the garlic.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes until translucent.
  4. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  5. Stir in the roasted poblano strips, heavy cream, salt, and black pepper. Cook for another 5-7 minutes, allowing the mixture to simmer and thicken slightly.
  6. Remove from heat and stir in the chopped cilantro. Adjust seasoning if necessary.
  7. Serve warm, garnished with additional cilantro if desired.
