Steps
- Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered, about 5-7 minutes. Place them in a plastic bag to steam for 10 minutes, then peel off the skin, remove the seeds, and slice into strips.
- While the peppers are steaming, thinly slice the yellow onion and mince the garlic.
- In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
