- Heavy cream - 120 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped
- Queso fresco - 50 grams, crumbled
Steps
- Roast the poblano peppers over an open flame or under a broiler until the skin is blistered and charred. Place them in a bowl, cover with plastic wrap, and let steam for 10 minutes.
- Once cooled, peel the skin off the poblanos, remove the seeds, and slice them into strips.
- In a skillet, heat olive oil over medium heat. Add sliced onion and cook until translucent, about 5 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in the sliced poblano peppers, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the heavy cream and mix well. Allow to simmer for about 5 minutes until the sauce thickens slightly.
- Remove from heat and stir in chopped cilantro.
- Serve warm, topped with crumbled queso fresco.
