Ingredients

  • Poblano peppers - 3 medium
  • Yellow onion - 1 medium
  • Garlic - 2 cloves
  • Heavy cream - 120 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Queso fresco - 50 grams, crumbled

Steps

  1. Roast the poblano peppers over an open flame or under a broiler until the skin is blistered and charred. Place them in a bowl, cover with plastic wrap, and let steam for 10 minutes.
  2. Once cooled, peel the skin off the poblanos, remove the seeds, and slice them into strips.
  3. In a skillet, heat olive oil over medium heat. Add sliced onion and cook until translucent, about 5 minutes.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Stir in the sliced poblano peppers, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  6. Pour in the heavy cream and mix well. Allow to simmer for about 5 minutes until the sauce thickens slightly.
  7. Remove from heat and stir in chopped cilantro.
  8. Serve warm, topped with crumbled queso fresco.
