- Almond flour - 1 cup
- Shredded mozzarella cheese - 1 cup
- Cream cheese - 60 grams
- Egg - 1 large
- Poblano peppers - 2 medium, roasted and sliced
- Ground cumin - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Chopped fresh cilantro - 2 tablespoons
- Sour cream - 60 grams (for topping)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, cumin, garlic powder, salt, and black pepper. Mix until well combined.
- Line a baking sheet with parchment paper and spread the mixture into a pizza shape, about 1 cm thick.
- Bake the crust in the preheated oven for 12-15 minutes until golden brown.
- While the crust is baking, roast the poblano peppers over an open flame or in a broiler until charred. Place in a sealed bag for 10 minutes, then peel off the skin and slice.
- Once the crust is done, remove it from the oven and top with sliced poblano peppers, a drizzle of olive oil, and chopped cilantro.
- Return the pizza to the oven for an additional 5-7 minutes until the toppings are heated through.
- Serve hot with a dollop of sour cream on top.
