Ingredients

  • Almond flour - 1 cup
  • Shredded mozzarella cheese - 1 cup
  • Cream cheese - 60 grams
  • Egg - 1 large
  • Poblano peppers - 2 medium, roasted and sliced
  • Ground cumin - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Chopped fresh cilantro - 2 tablespoons
  • Sour cream - 60 grams (for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, cumin, garlic powder, salt, and black pepper. Mix until well combined.
  3. Line a baking sheet with parchment paper and spread the mixture into a pizza shape, about 1 cm thick.
  4. Bake the crust in the preheated oven for 12-15 minutes until golden brown.
  5. While the crust is baking, roast the poblano peppers over an open flame or in a broiler until charred. Place in a sealed bag for 10 minutes, then peel off the skin and slice.
  6. Once the crust is done, remove it from the oven and top with sliced poblano peppers, a drizzle of olive oil, and chopped cilantro.
  7. Return the pizza to the oven for an additional 5-7 minutes until the toppings are heated through.
  8. Serve hot with a dollop of sour cream on top.
